Decadent Chocolate Coconut Veggie Smoothie Bowl

This is how a pound of veggies looks like!!



Smoothie bowl is hands down my favourite breakfast food in the world! And I never get bored with it, because there are SO variations you can play with - using different veggies, fruits, superfoods, nuts, seeds, protein powders, and the list goes on and on! The thing I love most about the smoothie bowls is that they can be incredibly healthy, and still taste like the most decadent dessert you’ve ever had. Like this recipe, which is one of my favourites. It includes three servings of healthy veggies and tastes like a thick, gooey, decadent chocolate milkshake. And just like all of my recipes, it is plant-based (vegan), gluten- , soy- and sugar free. As a base for my Decadent Chocolate Coconut Veggie Smoothie Bowl I used cauliflower and courgette - both full of vitamins, minerals and healthy fibre. They don’t have a distinct taste, so you won’t - notice they are in there at all. Plus they will add a wonderful creaminess – especially if you freeze them for a couple of hours before making a smoothie. Other veggie I’ve used is avocado, which will add even more creaminess and healthy fat. It’s always good to include some healthy fats in your smoothie bowl, because they help you absorb all the vitamins and minerals from the veggies. And now for the tasty stuff: I’ve added raw cacao powder, which is full of antioxidants and magnesium. For some extra yumminess, you can add some fresh coconut or coconut chips. The combination of cacao and coconut tastes amazing, and it will also add some extra healthy fat. To bulk it up a little bit, and make it a real meal rather than a drink, I’ve added vegan protein powder. I love pea or hemp protein, but you can add any other version you like.

Plus some linseeds and chia seeds for healthy omega 3 fats. I used a bit of Stevia for some extra sweetness. Some people don’t really like the taste of it, so you could also use a couple of dried dates, figs, prunes instead.


And last, but not least, to get it all going, we need a liquid ingredient. I love the creaminess of almond milk, but you can use coconut, oat, hazelnut or any other plant based milk.

Also, I love to add something crunchy on top, because it’s delicious, and it also helps you chew the smoothie a little bit and add the digestive enzymes to it so that it digests even easier.


Okay, here we go with the full recipe: Ingredients:

  • 1 cup of fresh or frozen cauliflower

  • 1 cup of fresh or frozen courgette

  • ½ avocado

  • 2 tablespoons of raw cacao powder

  • 1 tablespoon of vegan protein of your choice

  • 1 cup of plant-based milk of your choice

  • ½ cup of fresh coconut or coconut chips

  • 1 tablespoon of vegan protein of your choice

  • A pinch of raw green stevia for extra sweetness

  • Topping of your choice (I used cacao nibs, toasted coconut chips and coconut shreds)

Method: Blend them all together in a high-speed blender (Vitamix or Nutri Bullet f.e.), and enjoy! xx Alma #yourwellnessengineer
